I was recently in South Africa to celebrate a very special 18th birthday and Matric Ball (Prom). As requested by the birthday girl, I made a red velvet cake with cream cheese frosting. It was a two-tier topsy turvy-esque cake covered in marbled fondant with gold shoes and butterflies. Unfortunately the weather was humid and very hot which made the cake seem to be ‘melting’. It was enjoyed by all though and the birthday girl loved it!

Whenever I visit, I also spend time decorating with my daughter and her friends, showing them a few techniques and letting them have fun with fondant. These were some of the pretty results of their endeavours!
Besides the giant carrot cake requested, my mum was also treated her favourite nibble of coconut macaroons.
This week we’re working on a few very exciting projects, including a 40th disco cupcake party! Stay tuned
